Red Bean Sweet Soup with just a few Ingredients (Adzuki bean)

Adzuki bean also known as red bean. Adzuki beans is known for it's high protein content and also one of the easiest beans to digest.


Plant-based diets are an amazing way to adopt healthy eating choices while decreasing the intake of highly processed energy-dense food and drinks.


Plant-based diets are easy to follow because there’s no need to count calories or stress about meeting certain macronutrient goals each day. In essence, it’s simply about eating more plant-based foods to help:

- Reduced risk of certain cancers

- Reduced arthritis pain

- Improved gut health

- Reduced risk of cognitive impairment and dementia


Our family loves making this delicious red bean sweet soup 🤤 here's a simple recipe:

Ingredients:

2L of water

350g red beans

100g coconut sugar or monk fruit (optional or less sugar depending on how sweet you like it)

2 pieces of sun dried aged orange peel (optional)


Instructions:

1. Wash red beans thoroughly with water

2. Bring 2L of water to boil. Add red beans and aged orange peel and cook for about 30 minutes, turn off heat. Let it soak with the lid on for 30 minutes.

3. Turn on to medium heat and add in sugar. Let it simmer for 15 minutes. Then turn off the heat.

It's ready...enjoy!
