Updated: Jan 10, 2023

Looking for a good snack for the kids, or even for yourself. Stop eating processed snacks and try making energy balls. I love making these easy vegan energy balls.

2 scoops of protein powder

1/2 cup of oatmeal

1/4 cup of mixed nuts or pumpkin seeds

1/4 cup of dried apricots or fruit (chopped up finely)

1/4 cup of dried shredded coconut

2 teaspoons of cocoa powder

1 cup of nut butter

optional: sweeten with blackstrap molasses/raw honey, chocolate chips

Mix protein powder together with 1/2 cup water

In a large bowl mix all the ingredients together.

Roll them into small balls.

Refrigerate for 1 hour and ENJOY!
